Authentic Calasparra paella rice with the D.O. Calasparra seal. A round, short-grain rice from the fields surrounding the village of Calasparra in Murcia irrigated by only fresh, cold mountain rivers flowing throughout the region.
With a slow maturation process and high starch content, the rice absorbs more liquid and flavor during cooking, while retaining its structure. Rather than becoming creamy or sticky, each grain remains firm and full of flavor, ideal for paella (obviously).
Despite this paella-specific designation, do not hesitate to use it for risotto, rice cakes, rice salad, mushrooms with rice, saffron rice, chicken and rice, or a bowl of rice topped with anything and everything you desire. It's a versatile rice.
